Ras Malai, or roshmalai, is a popular dessert in West Bengal. It is made using soft, fresh cheese called ‘chhena.’ It is very tasty!

The chhena is boiled in sugar syrup and then soaked in a cardamom-flavoured sweet milk syrup. This amazing dessert is served cold.

Is chhena really cheese?

Cheese is a milk product. There are various types of cheese worldwide, having different tastes and names. So, 'Chhena' can also refer to a type of cheese.

This is just like how paneer is known as Indian cottage cheese in English. Both cheese and chhena are, after all, made from milk.
